The Wedding Food Diary
These are the recipes for the food we ate together with various family and friends on July 31 as we got ready for Vicky and James’ wedding.
Recipe 1: Dinner to fuss over James, the Groom

Vegetarian lasagne
Ingredients
- Lasagne sheets
- Jar spaghetti sauce
- Packet of spinach, washed
- Tub of ricotta
- 2 Large courgettes, sliced thinly lengthways
- Punnet of mushrooms
- Packet of basil
- Garlic powder
- White sauce
- Asiago cheese
Plus one lasagne tray (purchased specially)

Method
- Boil package of lasagne sheets, 10 mins. Add oil so they don’t stick.
- Spread a bottle of spaghetti sauce in bottom of lasagne tray, line with lasagne.
- In frying pan, wilt spinach, cook until water gone, season with salt and pepper, garlic powder. Add half tub of ricotta, mix, cook until excess water gone. Add to bottom layer of lasagna.
- Next layer of lasagne, spoon on spaghetti sauce. Layer courgettes, more sauce, layer of lasagne.
- Wipe out frying pan, add oil, fry mushroom until excess water gone, add garlic powder, salt and pepper, other half tub of ricotta, mix, add to lasagne.
- Another layer of lasagna, sauce, layer of courgette, sauce, lasagne layer
- Remaining sauce, realise not enough, make white sauce, on lasagne, top with cheese.
- Cook at 200C for 30 mins approx.
